Probably the best known are (1) the Casado (translates as married) which is supposed to have originated from the lunch that wives would prepare for their husbands who worked hard in the fields to take with them. A complete Casado would include rice, beans, a salad, fried plantains, possibly a picadillo (finely chopped cooked vegetables with or without ground beef) or yucca, tortillas, and a protein option (pork chop, beef, chicken, or fish, usually the fish is breaded.) The other well-known dish is (2) the traditional breakfast dish known as Gallo Pinto which will have rice and beans mixed with spices and sauce, along with eggs, cheese, sausage, fried plantain, sour cream and tortillas or bread and of course a great-tasting cup of coffee and possibly some freshly squeezed fruit juice!
Our cuisine is mainly influenced by Spain and added to that is the corn-based dishes which reflect our Indigenous culture along with dishes that reflect our Afro Caribbean culture along with some dishes from our Chinese immigrant culture.
